Since I have been eliminating processed and boxed foods from our diet, in order to provide us with a healthier diet, Rice-A-Roni was on my list to duplicate since it has been one of our favorite rice mixes. Since vermicelli is in many of the Rice-a-Roni mixes, I wanted to find out more about it. Vermicelli is a thin noodle that can be made from rice or durum wheat. Suji vermicelli is made from ground dried durum wheat which is supposedly healthier than refined wheat products, and is used primarily in South India cuisine.Having read the ingredients in Rice-a-Roni, I believed there had to be a healthier alternative. For example, Chicken and Garlic Rice-A-Roni doesn't even include vermicelli in the ingredients list, yet the instructions say to brown the rice and vermicelli in butter. It does, however, list natural flavors, monosodium glutamate, hydrolyzed corn protein, hydrolyzed corn gluten, ferric orthophosphate, disodium guanylate, disodium inosinate, ferrous sulfate, and more in the ingredients list. If you are familiar with GMO products, you know that natural flavors is a way of hiding GMO products and corn products used are always GMO corn. As for the rest of the ingredients listed, "Why would we want to consume them??"I started this quest by making rice pilaf, another favorite, in my rice cooker that also sautés using brown rice. Sautéed onion and garlic in butter, added the brown rice to brown and absorb the butter, added recommended water (or chicken broth) for brown rice, shredded carrots, and cooked in the rice cooker on the brown rice setting. After the rice was cooked, I added chopped fresh parsley. Wow!! This was the perfectly cooked fluffy rice pilaf.Next was to make a something similar to Rice-A- Roni. Since the vermicelli requires the same amount of water for cooking as brown rice, I then substituted 1/4 of the brown rice quantity with vermicelli, and did everything else the same as the rice pilaf. It was perfect!! I made enough to freeze in portions for 5 more meals.Someone once told me that sometimes you have to feed your body and sometimes you have to feed your soul. This meant that Rice-A-Roni feeds the soul because it tastes so good. Personally, I believe you can do both by cooking healthy. This vermicelli makes it easy to replicate Rice-A-Roni and eliminate the unneeded chemicals and GMO additives.I hope this review was helpful for you. I will update this review if my opinion changes.
