2lbs Ground Pork10 tbs Chorizo Mix3 tbs Malt Vinegar Powder1 tbs San Francisco Hickory Smoked Salt (1 tsp if you are on a low-sodium diet)3 oz Cold WaterMixed in a stand mixer and refrigerated over night.Perfect results, big flavor that is better than anything in grocery stores. Adding straight vinegar gives it a much harsher vinegar flavor, makes the sausage a bit watery and degrades the texture of the meat. Vinegar powder is significantly better over all. Malt vinegar powder adds extra depth of flavor that you might not notice unless you skip it. The smoked salt gives it a nice smokey flavor in the background.This is pretty great stuff. Perfect flavor with as much or as little salt as you want. I'm on a sodium restricted diet, so chorizo from the store is not an option.This is a big container, but you need a lot of spice for each batch, and for the amount you get, it's a very reasonable price.I used a stand mixer to mix 2lbs of ground pork with 2.5 oz seasoning and 3 oz of 5% cane vinegar, a tablespoon of hot Korean chili flakes and a tablespoon of smoked salt, giving each 4oz serving under 150mg of sodium. I left out the 3oz of water that the recipe listed as it is not necessary. It turned out great, though my pork was very lean and next time I will add some additional fat and more chili flakes. Normal folks will want to add probably 4x the salt. Store bought is about 8x the salt.I'm pretty thrilled to be able to eat chorizo con huevos again.
