My partner's grandmother was an outstanding Mexican chef. She ran a boarding house in Texas for many years and they always had a long waiting list because the food was so great. She taught her daughters and my partner all her recipes. She made almost everything from scratch (including tortillas), but she told my partner to use Dona Maria Mole for mole base because it was equal to her mole from scratch with a couple of minor ingredients added. All that my partner adds is a bit of peanut butter and a little cinnamon. If you want a hotter mole, add a bit of chili pepper, but we find the heat level just right without any added.The resulting mole is better than any restaurant mole I've ever had.
