This tofu is a staple food in my house, I always have a case in my pantry. A lot of restaurants use this type of tofu for their soups and tofu dishes-you might notice the smooth texture and signature taste from going out to eat. However, if you usually get NON-SILKEN firm tofu at the grocery store and think this is the same, you'll be disappointed. This tofu is made differently-soy milk is poured into the aseptic packaging and it is formed to the shape of the container. It's VERY delicate and will fall apart if you mess around with it too much or try to press it. My favorite uses for this tofu include: miso soup, mapo tofu (a dish with ground beef and tofu), marinated for use in sushi, nigiri, and the center for stuffed onigiri, on top of rice with bonito shavings or furikake, and in some kinds of stir fried dishes but only if you add it at the very end (too much stirring and you'll just end up with soy shrapnel).
