I live in New Mexico and I swear these are the best refried beans of any kind, anywhere. We’re blessed with Mexican and New Mexican Food restaurants on every street corner and we eat at all of them. Rice and beans are a staple of every plate and we eat all of them! I eat the fat-free version of these and they’re delicious and authentic, after all they’re Santa Fe beans. A purist might refry them in a little lard, but I never have needed to. They taste absolutely fresh and delicious. I’d put them up against any freshly-mashed and fried ones. I do add a clove of garlic, some chopped cilantro and cumin, just to my personal taste.Just boil water, add the package of beans, stirring the beans into the boiling water and turn stovetop down to “Low.” Stir, put the pot lid on and stir again in a few minutes. When they’re the consistency you prefer, I like mine drier rather than soupier, they’re done. All in all it only takes a few minutes to prepare. I add 1 1/2 cups of water instead of 2 for my slightly chunkier, drier beans. If you like them very creamy, try the whole 2 cups of water. Enjoy!
