Shirakiku is so generous to give us so much delicious nori for such a reasonable price. This product has no salt added, no oil added, no preservatives added, nothing added. However, it has been roasted to make it taste more delicious.It's not clear how much damage the roasting process inflicts on the healthfulness of nori. The worst possibility might be that roasting converts some of the long-chain omega-3 fatty acid, eicosapentaenoic acid (EPA), in nori into trans fat. Also, roasting might create the same mutagens that Americans create every day when they cook their meats such as nitrosamines, heterocyclic amines, polycyclic aromatic hydrocarbons, dietary advanced glycation endproducts, dietary advanced lipoxidation endproducts, alkanals, alkenals, etc.Advantages of all nori products:(1)Nori contains estrogen-blocking phytochemicals which, similar to the phytoestrogens in soybean foods and flaxseeds, dramatically lowered the risk of breast cancer to less than half when Korean women who ate gim (nori) regularly were compared against Korean women who didn't eat gim (nori) regularly.(2)Nori is a moderately good source of the long-chain omega-3 fatty acid, eicosapentaenoic acid (EPA). However, "red" seaweeds have been placed under Kingdom Plantae together with all land plants.
