This is authentic Kyushu (region in Japan) style yuzukosho. Yuzu is an extremely aromatic citrus fruit in Japan and its zest the core flavoring component. Kosho refers to pepper, as this uses chopped chile peppers. The combination of pronounced citrusy, salty, and peppery components not only produce a unique flavoring, but also a very unique sensation for your tongue. If you have never tried this and have a love for unique regional foods, I can guarantee you will enjoy using this condiment.Yuzukosho is most popularly used for yakitori (grilled skewered items), but is is also a fantastic complement for sushi and sashimi, among several other things. Authentic Japanese sushi chefs (shokunin) that go beyond the tasty yet standard fare California and spicy tuna rolls will dab various sushi and sashimi with this condiment and it can illicit a much more complex and satisfying flavor than a soy sauce. Not everyone has access to nor can afford to frequently enjoy great quality sushi (including myself), but dabbing some of this on store bought sushi can really bring things out and make you forget that you just bought your sushi on a giant plastic party tray.As with many Japanese recipes/flavorings, this is a condiment that you will want to use very sparingly to get the most out of it. This is a very aromatic and flavorful condiment and a very little will go a long way. A mere one third of a pea sized dabbing will produce a lot of flavor on a piece of sushi, or biteful of yakitori.I grew up and live in a part of California where there is a huge Japanese population (I'm of mixed race myself) and many authentic, highly rated Japanese restauraunts. Some of the best in the country, even. One of my favorite yakitori restauraunts, Shin Sen Gumi Yakitori, in Gardena, has an excellent in-house yuzukosho available at every table to complement their grilled skewers and cabbage side dish. I've found that this brand of yuzukosho is very similar to Shin Sen Gumi's, that is to say, it is of very high quality.As a lover of authentic Japanese food, a lover of cooking, and someone with some heritage and grew up eating this kind of stuff, this item comes highly, highly recommended.PS. If you want to grill meats Japanese style, try rubbing in a touch of toasted and ground sansho pepper aka sichuan pepper, or shichimi togarashi mixture (a multi component spice mix), and some salt, of course.
